It’s not a good thing to repeat oneself, but the 2018 harvest – indicated from the start as “another” vintage of the century (together with 2015) – gave us extremely high quality grapes. With these beautiful, healthy, fragrant bunches of grapes as a “raw material”, it was “sufficient” to avoid errors in the winery: low temperature fermentation to preserve the grapes’ delicate aromas, no malolactic fermentation in order to favour freshness, separate fermentation to accentuate the character of each individual grape variety. After blending the 3 base wines, the “presa di spuma” (= formation of bubbles) occurred simply by adding grape must, which was concentrated first (no extraneous sugars)… in just a few days the extremely fine bubbles began to form.

The wine’s versatility and delicate character make it suitable to drink “on its own“, or throughout an entire meal. It’s ideal for aperitifs, with light fish appetizers, with vegetable crudités, with fish risotto and pasta dishes.
