Vintage 2020 was one of the best vintages we have ever experienced, since we started our winery in 1997. We are proud to present you our new vintage of our Chardonnay based white blend. Ladybird organic white was first produced in the vintage of 2005 and we continue with our crazy wine making philosophy since then. The 2020 wine is all from Laibach’s own organic vineyards. We can actually call this an estate wine but to make it more interesting we always keep our options open. The vineyards for this wine are between 5 and 25 years old. All these vineyards are farmed organically and most of them still without any irrigation. We pick everything by hand in the early mornings. The winery itself is surrounded by Chardonnay so we can get it to the cellar quickly. We do only whole bunch pressing for this wine because we do not use any fining agents at all on the farm. We do not settle with commercial enzyme, we do not use sulphur in the juice. No yeast or yeast food is added and we strangely enough ferment very warm for a white. So actually we are doing exactly the opposite of what they teach you about modern day winemaking. Fermentation can last anything from 4 days to 4 months. Fermentation is done in old large 500 litre French oak barrels and the wine will spend as long as possible on the sediment without sulphur and if Malolactic happens then be it. The wine is roughly filtered and a bit of sulphur is added before bottling.
Light straw colour. Aromas of hay, pineapple and white peach are very prominent on the bouquet. The palate is fresh with a lovely creamy texture, with a fruit salad explosion of flavour. Medium bodied with no real wood flavour at all and a long lingering aftertaste. Enjoy with food or any social occasion.
