Vintage Conditions
The preceding winter had sufficient rain and cold units. The weather remained favourable throughout the growing season, with relatively warm days, no significant heatwaves and cool night temperatures.
Winemaking / Maturation
This wine is made from our older organically farmed vineyards and are planted in some of the best terroir in Stellenbosch. Complete out of the box winemaking together with low yields help us to make this wine that can compete with a 50 year plus vineyard. It is all about getting the balance right. We pick everything by hand in the early mornings if possible. We have 4 blocks of Chenin on 4 different areas on the farm. Each block is unique and ripens at different times over a 3 week period. The grapes are naturally fermented in open top tanks, with extended skin contact during fermentation. No enzymes, yeast nutrients or fining agents are added. After pressing some parts are aged in concrete shaped eggs as well as some larger format barrels for 11 months without sulphur on the gross lees.
Tasting Notes
Light straw colour. A potpourri of flavours with white nectarine, pineapple, yellow apple and dried herbs. The palate is rich, velvety with an amazing aftertaste. Long with a lovely balanced lingering lemon and lime like acidity. It begs to be opened, but this wine will age gracefully and got enough structure and complexity to last 6 – 10 years. Enjoy.
