+This is a 100% whole bunch fermented Cabernet Sauvignon from the Ceres Mountains. With one third of the wine spending 18 months on the stems and skins. Please note that I have not had time to write the story on the wine. For now please listen to the voice note below.

Vineyard: 750 meters above sea-level Ceres Plateaux grapes in sandstone soil. Vines trained according to the vertical shoot positioning method on a traditional 3 wire trellis system.
Winemaking
The grapes were picked at optimal ripeness and cooled overnight to 4 degrees celsius. The next morning the grapes were hand sorted to open top French oak fermenters for whole cluster fermentation. 2 thirds were pressed after fermentation and the other third, the barrel were closed up with the whole clusters inside the barrel. All aged for 18 months. The whole clusters pressed after 18 months of skin and stem aging, blended and bottled.
